This long, airy, two story stone building serves as a distillery and storage facility for the monastery. Here the Monastery of Saint Brutus transforms grapes and wine into distilled liquors and fortified wines. Brandy, sherry and port are their most common, all made with the excellent grapes grown by the nearby Abbey. These products are of excellent quality and reputations, and can be sold for a hefty price both in local markets and further abroad. Their 30 year reserve brandy especially (Called Old Brutus) is heavily in demand across the The Thousand Isles and can be found as far away as Valoria.
The process of distilling can be quite dangerous, the alcohol vapors rise and gather in the beams of the building and are quite explosive. Hence the construction of the building has gone to great lengths to include large windows to ensure airflow
